Ingredients
2 tablespoons olive oil
1 medium onion, diced
3 garlic cloves, minced
1 lb boneless skinless chicken, shredded
2 cans (15 oz each) white beans, drained and rinsed
1 (4 oz) can diced green chiles
2 teaspoons ground cumin
1 teaspoon dried oregano
1/2 teaspoon chili powder
Salt and black pepper, to taste
4 cups chicken broth
1/2 cup cream cheese or sour cream
Optional garnish: shredded cheese, cilantro, lime wedges
Instructions
1. Heat olive oil in a large pot. Sauté onion and garlic until fragrant, about 5 minutes.
2. Add chicken, beans, green chiles, and spices. Stir well.
3. Pour in chicken broth and simmer for 15–20 minutes.
4. Add cream cheese or sour cream and stir until smooth and creamy.
5. Let cool and portion into freezer-safe containers. Garnish as desired when serving.
Notes
Freeze for up to 3 months in glass containers with tight lids.
Thaw overnight in the fridge before reheating gently with a splash of broth.
