Description

Ingredients

  • 1 cup rolled oats
  • 1 medium zucchini, grated
  • 2 eggs
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon (optional)
  • 1 tablespoon honey or maple syrup (optional)
  • 1/2 cup milk (or plant-based milk)
  • 1/2 teaspoon vanilla extract (optional)

Instructions

  1. In a bowl, combine oats, baking powder, and cinnamon.
  2. Grate the zucchini and squeeze out excess moisture with a paper towel.
  3. In a separate bowl, whisk eggs, milk, honey/maple syrup, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients, stirring to combine.
  5. Let the batter sit for 5 minutes to allow oats to absorb the moisture.
  6. Heat a non-stick pan over medium heat and cook pancakes until golden brown on both sides, about 2-3 minutes per side.
  7. Serve with your favorite toppings.

Notes

You can make this recipe vegan by using flax eggs or chia eggs. Adjust the sweetness with more or less honey/maple syrup as per your taste.
