Ingredients
- 1 cup rolled oats
- 1 medium zucchini, grated
- 2 eggs

- 1/2 teaspoon cinnamon (optional)
- 1 tablespoon honey or maple syrup (optional)
- 1/2 cup milk (or plant-based milk)
- 1/2 teaspoon vanilla extract (optional)
Instructions
- In a bowl, combine oats, baking powder, and cinnamon.
- Grate the zucchini and squeeze out excess moisture with a paper towel.
- In a separate bowl, whisk eggs, milk, honey/maple syrup, and vanilla extract.
- Add the wet ingredients to the dry ingredients, stirring to combine.
- Let the batter sit for 5 minutes to allow oats to absorb the moisture.
- Heat a non-stick pan over medium heat and cook pancakes until golden brown on both sides, about 2-3 minutes per side.
- Serve with your favorite toppings.
Notes
You can make this recipe vegan by using flax eggs or chia eggs. Adjust the sweetness with more or less honey/maple syrup as per your taste.
