Description
A one-dish wonder, this chicken, rice & onion casserole layers juicy chicken, fluffy rice, and golden onions into a warm, satisfying dinner.
Ingredients
1 1/2 cups uncooked long-grain rice
4 boneless skinless chicken thighs (or breasts)
2 large onions, thinly sliced
1 1/2 cups chicken broth
2 tbsp olive oil
2 tbsp butter
1/2 tsp salt
1/4 tsp pepper
Fresh herbs or shredded cheese (optional for garnish)
Instructions
1. Preheat oven to 375°F (190°C).
2. In a skillet, sauté onions in olive oil until soft and lightly golden (10–12 minutes).
3. Lightly grease a 4-quart baking dish.
4. Add uncooked rice in a flat layer.
5. Top rice with chicken pieces.
6. Spread sautéed onions evenly over chicken.
7. Pour broth over the whole dish to just cover rice.
8. Dot butter on top and season with salt and pepper.
9. Cover with foil and bake for 30 minutes.
10. Uncover and bake 10–15 minutes more until rice is tender and top is golden.
11. Let rest for 5 minutes before serving. Garnish if desired.
Notes
Use bone-in chicken if preferred, just extend bake time 10 minutes.
Try adding mushrooms or fresh spinach for a veggie twist.
Add shredded Gruyère or mozzarella on top for a cheesy version.
