Description

These golden huckleberry scones are the perfect balance of flaky, buttery texture and vibrant, fruity huckleberries. Topped with a tangy lemon glaze, these scones are an irresistible treat for breakfast, brunch, or any time of day.


Ingredients

2 cups all-purpose flour

1/4 cup granulated sugar

1 tbsp baking powder

1/2 tsp salt

1/2 cup cold unsalted butter (cubed)

1/2 cup heavy cream

1 large egg

1 cup huckleberries (fresh or frozen)

1/2 cup powdered sugar (for glaze)

1 tbsp lemon juice (for glaze)


Instructions

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

Mix flour, sugar, baking powder, and salt. Add cubed butter and work it into the dry ingredients until crumbly.

Add the cream and egg, mixing gently until dough forms. Fold in huckleberries.

Shape dough into a 1-inch thick disk and cut into wedges. Place on baking sheet and bake for 18-20 minutes.

Make the glaze by mixing powdered sugar and lemon juice. Drizzle over warm scones.

Notes

Ensure the butter is cold for the best scone texture. If you can’t find huckleberries, you can substitute blueberries.
