Description

Healthy No-Bake Blueberry Muffin Energy Balls are soft, chewy, and packed with oats, almond butter, and dried blueberries. Quick, easy, and perfect for meal prep snacks.


Ingredients

2 cups rolled oats

¾ cup almond butter (or peanut butter)

½ cup honey or maple syrup

½ cup dried blueberries

1 tsp vanilla extract

½ tsp cinnamon

Pinch of salt


Instructions

1. In a large mixing bowl, combine oats, almond butter, honey, vanilla, cinnamon, and salt.

2. Mix until dough comes together. If too dry, add more almond butter or honey.

3. Fold in dried blueberries.

4. Scoop 1–2 tbsp of mixture and roll into balls.

5. Place on parchment-lined tray and refrigerate 30 minutes.

6. Store in an airtight container in the fridge up to 1 week or freeze up to 1 month.

Notes

Use maple syrup instead of honey for a vegan option.

Add 1 tsp lemon zest for a blueberry lemon twist.

Mix in chopped almonds for a crunchy version.

If dough is too sticky, add extra oats until firm enough to roll.
