Description

Ingredients

4 whole wheat or spinach tortillas

½ cup hummus (any flavor)

1 red bell pepper, thinly sliced

1 yellow bell pepper, thinly sliced

1 cup fresh spinach leaves

½ cup shredded carrots

1 small cucumber, julienned

Optional: avocado slices, vegan cheese, or sprouts


Instructions

1. Lay a tortilla flat on a cutting board.

2. Spread a generous layer of hummus evenly over the tortilla.

3. Layer spinach, bell peppers, carrots, and cucumber across the middle.

4. Add optional extras like avocado or sprouts.

5. Roll the tortilla tightly into a log shape.

6. Slice into 1-inch pieces for snack-sized bites, or leave whole for a wrap.

7. Repeat with remaining tortillas.

Notes
