Description

Marry Me Chicken in the Crockpot is a dreamy, creamy, slow-cooked dinner that combines tender chicken breasts, parmesan, garlic, and sweet sun-dried tomatoes in a comforting sauce perfect for pasta or mashed potatoes.


Ingredients

Boneless, skinless chicken breasts – 1.5 lb

Sun-dried tomatoes, chopped – ½ cup

Minced garlic – 3 cloves

Chicken broth – 1 cup

Heavy cream – ½ cup

Grated Parmesan cheese – ⅓ to ½ cup

Italian seasoning – 1 tsp

Butter, cubed – 2 Tbsp

Salt & black pepper – to taste

Fresh basil or parsley (garnish) – a few Tbsp


Instructions

1. Grease the slow cooker insert or use a liner.

2. Place chicken breasts inside and season with salt, pepper, and Italian seasoning.

3. Top with minced garlic and sun-dried tomatoes.

4. In a bowl, mix chicken broth, heavy cream, butter, and half the Parmesan.

5. Pour over the chicken in the slow cooker.

6. Cover and cook on Low for 5–6 hours or High for 2½–3 hours.

7. Stir gently, sprinkle remaining Parmesan on top.

8. Recover for 10 minutes until melted.

9. Garnish with herbs and serve over pasta or mashed potatoes.

Notes

Use chicken thighs for extra richness.

Add spinach or mushrooms for a heartier version.

Refrigerate leftovers for up to 3 days and reheat with a splash of cream.
