This quick Rotisserie Chicken Salad recipe is ready in just 10 minutes using pre-cooked chicken, celery, herbs, and creamy mayo. A perfect fast lunch!
Ingredients
2 cups shredded rotisserie chicken
1 cup finely chopped celery
1/2 cup mayonnaise
1 teaspoon Dijon mustard
1 tablespoon chopped herbs (parsley, chives, or dill)
1 teaspoon lemon juice or apple cider vinegar
Salt and black pepper to taste
Instructions
1. Shred rotisserie chicken and place in a mixing bowl.
2. Add chopped celery and herbs to the bowl.
3. In a separate bowl, mix mayonnaise, mustard, lemon juice, salt, and pepper.
4. Pour dressing over chicken mixture and stir to coat evenly.
5. Taste and adjust seasoning as needed. Serve immediately or chill.
Notes
