Description
This slow cooker chili is filled with beef, beans, tomatoes, and bold spices. It’s an easy, dump-and-go dinner that builds flavor while you go about your day.
Ingredients
1 lb ground beef
1 medium onion, diced
2 garlic cloves, minced
1 can (14 oz) red beans, drained and rinsed
1 can (14 oz) kidney beans, drained and rinsed
1 can (14 oz) diced tomatoes
1 cup tomato sauce
2 tbsp chili powder
1 tsp ground cumin
1/2 tsp smoked paprika (optional)
Salt and pepper, to taste
1/2 cup beef broth or water

1 diced bell pepper
1 tsp Worcestershire sauce
Shredded cheddar and green onions (for garnish)
Instructions
1. In a skillet, brown the ground beef and diced onion over medium heat. Once beef is browned and onions are soft, stir in garlic and cook for 30 seconds.
2. Transfer beef mixture into the slow cooker.
3. Add beans, diced tomatoes, tomato sauce, chili powder, cumin, smoked paprika, salt, pepper, and broth.
4. Stir to combine evenly.
5. Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours.
6. Stir before serving and adjust seasoning as needed.
7. Serve hot with cheddar and green onions if desired.
Notes
This recipe freezes well—store in airtight containers for up to 3 months.
For a spicier version, add jalapeños or chipotle powder.
Make it vegetarian by substituting ground meat with lentils or mushrooms.
